Can't Fail Divinity

  • 2 cups sugar
  • ½ cup water
  • ¼ tsp salt
  • 1 pint marshmallow cream
  • ½ cup pecans or black walnuts
  • 1 tsp vanilla
    1. Boil sugar, water & salt until it forms a hard ball in cold water.
    2. Place cream in a mixing bowl and stir in hot syrup from step 1.
    3. Continue stirring until slightly stiff (holds a peak). Fold in nuts & vanilla.
    4. Drop from spoon onto wax paper.

    [While I was working on the family cookbook, I asked my mother for the recipes of several homemade candies I remembered from childhood. Her response refers in the first sentence to my father: "You know I'm not & never have been the candy maker in this family but these should serve the purpose. The divinity recipe is from the Independence County Home Demonstration Council of many years ago -- giving the members' names, so they gave recipes they were sure of."]
